THE INTERNAL TEMPERATURE OF POTENTIALLY HAZARDOUS FOODS SHALL BE 135°F, OR ABOVE EXCEPT DURING NECESSARY PERIODS OF PREPARATION, INCLUDING FOODS REQUIRING TRANSPORTATION.
